Specialists from the Russian agricultural safety watchdog in Kamchatka have detected chemical preservative levels exceeding permissible limits in a batch of salted sockeye salmon caviar. Laboratory analysis revealed that the concentrations of benzoic and sorbic acids in the product do not comply with current technical safety regulations.
According to established standards, the maximum allowable content of these additives is two grams per kilogram of finished product. The analyzed sample exceeded this technological threshold by 0.28 grams. Experts from the Kamchatka branch of the National Center for the Safety of Fishery and Agricultural Products indicate that such a deviation points to disruptions in the production cycle or a lack of precise control when dosing preserving agents.
Benzoic and sorbic acids are traditionally applied to extend the shelf life of Far Eastern seafood during transportation to other regions. However, deviations from the established recipe directly impact product safety. The accumulation of excess chemical components can trigger digestive disorders and allergic reactions in consumers.
Information regarding the non-compliant batch has been logged into the federal “Vesta” surveillance system. The owner of the cargo received a formal notification to rectify the violations. This issue is not an isolated incident for the current fishing season – in July, regulatory authorities recorded a similar case of excessive preservative use in another batch of sockeye caviar originating from local producers.
